Here's a simple recipe for lunch or dinner that even a beginner in the kitchen can make. As with all my recipes, improvisation is encouraged and welcome—adjust the ingredients to your taste and whatever you have in your fridge.
Now, let’s get to my recipe for crispy ham and cheese stuffed crêpes!
First things first—we need crêpes, of course! This is my go-to recipe that never fails and works great for both sweet and savory versions.
What You'll Need:
- 2 eggs
- 1 ½ cups (200g) all-purpose flour
- ¾ cup (200ml) warm milk
- ¾ cup (200ml) sparkling water
- 1 tablespoon oil
- 1 tablespoon melted butter
- A pinch of salt
Instructions:
- Lightly whisk the eggs, then add half of the milk and flour, mixing until smooth.
- Add the remaining milk, sparkling water, oil, melted butter, and salt, then mix well.
- Gradually add the rest of the flour to avoid lumps.
- Let the batter rest for about 20 minutes to allow everything to blend together.
- Cook on a hot, greased pan until golden on both sides.

While you're cooking the crêpes, you can prepare the filling at the same time. Here, I'll list what I used, but feel free to completely adjust this part to suit your taste.
What You'll Need:
- 300 grams of ham
- 100 grams of Gouda cheese
- 200 grams of mozzarella
- 2 wedges of processed cheese
- 1 egg
- 100 ml of cooking cream (sour cream can also be used)
- 1 tablespoon of mayonnaise
- A pinch of salt, pepper, and oregano to taste
Instructions:
Slice the ham into thin strips or grate it, grate the cheese, then add all the other ingredients and mix everything well. You're ready!

The next step is the most fun – rolling the crêpes! Do this while they’re still warm, as they’ll roll up more easily and will be simpler to coat in breadcrumbs later. I put about 2 tablespoons of the filling in each pancake, but adjust it based on the size of your pancakes – there are no rules.
Once you’ve rolled them all up, bread them the classic way: first dip them in beaten eggs, then coat them in breadcrumbs. And that’s it – we’re ready for the final step – frying! This time, I cooked them in an air fryer, which is a healthier alternative to frying in hot oil, BUT I promise you, no matter how you cook them, you’ll be delighted. Enjoy!
